QUICK & EASY CHICKEN CURRY





SKINLESS CHICKEN BREAST
1/2 ONION
1 GARLIC CLOVE
1 TSP CURRY POWDER
1 SMALL CHILLI
1/2 GREEN PEPPER
8 BUTTON MUSHROOMS


1 BLOCK OF FROZEN SPINACH
1 X 400G CAN OF CHOPPED TOMATOES

FOR SERVING: BASMATI RICE.



1. CHOP THE CHICKEN & DRY FRY IN A PREHEATED NON STICK PAN WITH THE ONION, GARLIC & SPINACH.

2. SPRINKLE THE CURRY POWDER OVER & COOK FOR 1 MINUTE, THEN ADD THE CHILLI, GREEN PEPPER, BUTTON MUSHROOMS & CHOPPED TOMATOES & SIMMER FOR 5 MINUTES.

3. SERVE WITH THE BASMATI RICE.
